Peerasak applies processing operations to sustainably transform raw materials into functional food products that will enhance consumer health and well being.

His work involves the application of traditional and emerging food processing technologies in sustainable ways. Technologies he worked with includes

• microwave processes for food and insect disinfestation of fruits and vegetables
• microfluidisation for modification of starch functionality
• high pressure processing for microbial decontamination and texture modification of food products
• pulse electric field for microbial decontamination of liquid product and enhanced extraction of bioactives
• cool plasma and e-beam application for food surface decontamination
• development of clear nanoemulsion for the incorporation of bioactive ingredients into food products
• thermal processing of food products includes consultancy and Approved Persons training
• through supply chain evaluation of carbon footprint impact for sustainable food production
• systems analysis of water usage and waste water streams to encourage increase water recycling initiatives

He has been involved in project management, people management, business development and client relationship management roles.

Working in these roles included:

• development of new client contracts and research opportunities
• manage resource and develop capabilities in thermal and non-thermal processes and technologies
• managing the food engineering science group including the pilot plant operation
• conduct training in thermal processing and carry out innovative technology briefings
• leading multi disciplinary project teams for projects in sustainable food processing, process and product development covering both traditional and novel technologies
• project manage and commissioning of new equipment/facilities
