Biography
Dr Kai Knoerzer is a Principal Research Scientist at CSIRO, Australia’s national science agency, where he leads strategic research in innovative food processing technologies and the integration of artificial intelligence (AI) across food systems. His work brings together engineering, sustainability, and digital transformation, supporting both scientific advancement and industrial innovation.
He holds a Bachelor of Science in Process Engineering, a Master of Science in Chemical Engineering, and a PhD (summa cum laude) in Food Process Engineering, all from the Karlsruhe Institute of Technology (KIT), Germany. In 2006, he joined Food Science Australia, a joint initiative of CSIRO and the Victorian Government, and has since played a central role in advancing next-generation food technologies within CSIRO’s Agriculture and Food business unit.
Dr Knoerzer’s research has focused on a range of novel processing technologies, including high-pressure thermal processing (HPTP), ultrasonics, megasonics, pulsed electric fields, and advanced extrusion systems. These approaches have applications across shelf-stable foods, protein structuring, and microbial safety. He is the sole inventor of the patented HPT canister, a transformative technology that enables thermal processing inside conventional high-pressure units. This innovation is now in early-stage commercialisation through industry partnerships.
He has authored or co-authored more than 100 peer-reviewed publications, over 150 national and international conference presentations, seven patents, and five edited books. He served as Editor-in-Chief of Elsevier’s major reference work Innovative Food Processing Technologies – A Comprehensive Review and continues to contribute as a reviewer, editor, and advisor across international journals and editorial boards.
Beyond food engineering, Dr Knoerzer is driving the integration of AI and machine learning into food systems. As strategic lead for AI within CSIRO’s Food Program, he has guided the development of the AI Playbook for Food, co-developed predictive modelling tools and LLM-based interfaces for R&D acceleration, and applied hybrid intelligence frameworks to support shelf-stable foods, fermentation processes, and regulatory insights.
His work reflects a commitment to translational science and the practical application of AI in food innovation.
Dr Knoerzer is a long-standing member of the Institute of Food Technologists (IFT), including its International Division, and has received multiple international awards for his contributions to food science and engineering. He is widely recognised as a thought leader in the future of food processing, linking foundational science with applied technology to deliver sustainable and intelligent food system solutions.
