Biography

I'm a food scientist with broad experience in physical chemistry, polymer and colloid chemistry, rheology, food product design and microscopy. One of my focus areas is protein functionality in foods, which includes technical functionality (foaming, gelling, emulsifying, dissolving etc.) and nutritional functionality (digestion, absorption, metabolism). I am also experienced in using Food Materials Science principles to build mechanistic linkages between structure (molecular, meso, micro, macro) and texture, and in advanced texture measurement via small- and large-amplitude oscillatory rheology and large deformation measurements.

I have a solid background in dairy and bakery systems, and have worked with protein ingredients from sources such as chickpea, mungbean, hemp, soy and insects. I have done a lot of confocal microscopy on food systems, as well as scanning and transmission electron microscopy and atomic force microscopy.
