Biography

Qualified chemist and the manager of CSIRO Food Grade Pilot Plant at the CSIRO Food Innovation Centre. He has 30-years experience in optimising unit operations and process development across a wide range of food segments including dairy ingredients and dairy products, protein/starch/fibre ingredients, extruded and snack products, heat and pressure stabilised products, deserts, gummies, plant milks and plant milk secondary products. He has led the successful scale up of numerous products from laboratory scale. My current role is as Team leader for the Processing Team, where I manage the pilot plant facilities and resources. Specialising in SME engagements within the Pilot Plant utilising a wide range of unit food processing equipment.
I started working with CSIRO as a Trainee in 1993 (while studying), based with The Division of Dairy Research. Early research was based on UHT processing, recombining (both REM and RSCM) and Spray drying. I was very adaptable being able to conduct research in the laboratory and then translate/scale into the pilot plant. Developing my skill set in recombining and thermal processing, led projects with international recombiners in Saudi Arabia to develop new products, methodologies of processing, laboratory audits and offshore quality assessments of consumer based products. My expertise branched out into membrane and centrifugal separations, Extrusion, EPT, multiple forms of evaporation technologies, HPP etc. This has enabled a very strong processing/engineering understanding to allow various unit processes to be assembled to deliver client needs.
